Yellowtail Sushi Bowl
Authentic sushi bowl with Buri sashimi

◇ Ingredients ◇
- 60g sashimi-grade yellowtail, skin off, cut into cubes
tamagoyaki
- 1 egg
- 3g sugar
sushi rice
- 180g cooked short-grain rice
- 2g salt
- 5g sugar
- 20ml vinegar
topping
- 20g cucumber, cut into small dice
- 1 shiso leaf, tore into pieces
- Colorful vegetables (bell pepper, string bean, okura, asparagus, etc.)
- Salt, toasted sesame seed, dried seaweed (nori), vegetable oil
◇ Way of making ◇
- step1.
Add the salt, sugar and vinegar to freshly cooked rice, and mix gently and thoroughly with a spatula. Transfer it to a plate and spread out to cool down.

Sprinkle the yellowtail with a pinch of salt.

Add the 3g sugar and a pinch of salt to the egg and whisk well. Heat a frying pan and add oil. Pour some egg mixture and swirl the pan until it coats the bottom. Cook until it sets. Take out the sheet of fried egg from the pan. When it cools down, cut into thin strips.

Season the cucumber with a pinch of salt. Boil the other vegetables and season with salt.
