Deep-fried Yellowtail in Vegetable Starchy Sauce

Nutritious dish of Buri and Vegetables

Ingredients

Serves 1
  • 100g yellowtail fillet, skin on, cut into large pieces
  • 2g cornstarch
  • Frying oil as needed
Chinese starchy sauce
  • 50㎖ stock
  • 3㎖ vinegar
  • 1g sugar
  • 1g salt
  • 3g cornstarch
  • 6㎖ water
  • 5g vegetable oil
  • 5g carrot, cut against fibers into julienned
  • 5g green bell pepper, cut against fibers into julienned
  • 10g celery, cut against fibers into julienned
  • 10g wood ear mushroom, cut against fibers into julienned

Way of making

  1. step1.

    Heat the frying oil to 170℃. Dust the yellowtail with cornstarch and deep-fry in the oil until golden brown. Drain the excess oil and place on a plate.

  2. step2.

    Mix the stock, vinegar, sugar, and salt in a bowl. Mix the cornstarch and water well in another bowl.

  3. step3.

    Heat a frying pan over medium heat, add the vegetable oil, add the stock mixture. Remove from the heat just below the boiling point, add the cornstarch mixture and mix well.
