Fried Yellowtail in Ginger Starchy Sauce

Aroma of spicy ginger stimulates your appetite

Ingredients

Serve 2
  • 120g yellowtail fillet, skin off, cut into bite size
  • Salt, cornstarch, frying oil as needed
  • 60㎖ stock or dashi
  • 6g light soy sauce
  • 2g cornstarch
  • 4㎖ water
  • Julienned ginger, soaked in water (ginger needles)

Way of making

  1. step1.

    Season the yellowtail with salt and dust with cornstarch. Heat the frying oil to 170℃ and deep-fry until golden brown.

  2. step2.

    Season the stock with light soy sauce. Mix 2g cornstarch with water and dissolve well.

  3. step3.

    Heat the stock in a saucepan, add the cornstarch mixture, and cook until it thickens. Add one-fourth of the julienned ginger.

  4. step4.

    Place the fried yellowtail on a dish, pour the starchy sauce, and top it with the rest of the ginger.
