Fried Yellowtail in Chinese-style Green Chive Sauce

Fried Buri with a kick of chives

Ingredients

Serves 1
  • 100g yellowtail, cut into large pieces
  • Salt, pepper, cornstarch, frying oil as needed
  • 5g green chive, cut into 3cm-long
  • 2g ginger, cut into julienned
  • 3g green onion, cut into 3cm-long strips
  • 20g vegetable oil
Chinese starchy sauce
  • 50g stock
  • 2g cornstarch
  • Salt, Chinese rice wine as needed, umami seasoning as you like

Way of making

  1. step1.

    Season the yellowtail with salt and pepper. Heat the frying oil to 170℃. Dust the yellowtail with cornstarch and deep-fry until golden brown. Drain the excess oil.

  2. step2.

    Heat a pan over medium heat, add the vegetable oil, and stir-fry the green chive, green onion, ginger, and the fried yellowtail. 

  3. step3.

    Mix the stock, cornstarch, salt, Chinese rice wine, and umami seasoning well, and add to the pan. Cook until it thickens.
