Grilled Yellowtail with Shio Koji

Koji enhances Buri’s umami

Ingredients

Serves 1
  • 120g yellowtail fillet, skin on
  • A pinch of salt
  • 5g soy sauce
  • 20g shio koji (salted rice malt)
  • 1g sugar

Way of making

  1. step1.

    Mix the soy sauce, shio koji and sugar well. Soak the yellowtail fillet in it overnight.

  2. step2.

    Grill or bake in an oven until brown.
