Sea Bream Banh Mi
Sashimi meets Vietnamese sandwich

◇ Ingredients ◇
Serves 2
- 80g sashimi grade red sea bream, thinly sliced
- 1 tsp lemon juice
- 2 tsp fish sauce
- 1 tsp olive oil
- 60g daikon radish, julienned
- 30g carrot, julienned
- 1/4 tsp salt
- 1 tsp vinegar
- 2 tsp sugar
- 3-4 stems cilantro, chopped (finely chop 1/3 of the stems)
- 100g baguette, cut into equal 2 pieces
- 1 tsp sa te tom or harissa or gochujang
◇ Way of making ◇
- step1.
Sprinkle the daikon radish and carrot with the salt and let stand for a while. Squeeze the excess water and combine it with vinegar and sugar.
- step2.
Combine the red sea bream with the lemon juice, fish sauce, olive oil and finely chopped cilantro stem.
- step3.
Split the baguette down the center of the side. Spread the sa te tom or your choice of spacy paste on one side. Squeeze the marinated fish gently and stuff them with the vegetables and the remaining cilantro stems and leaves in the bread.
